Gift Box Tutorial

One of my discipleship girls will turn sixteen tomorrow.  I needed something for Shawn to take her bday surprise to school.   Why not try making my own gift box?

With all the scrapbook papers and card stock available these days, making your own small gift boxes with a personal touch is a breeze.  I decided to try making my own by doing a simple top box and bottom box that would nest to close. They are easily customizable by changing the height or width, just change as you need.

Easy Vegetable Beef Soup

I do hope you had a great holiday!  We went to my mom’s for a week and had a great time with the family.  However, during the frenzied Black Friday shopping I was sneezed upon, coughed at, etc so much that I ended up sick.  It’s just today that I actually started feeling better.  I always seem to forget how bad the common cold can get until I get it. UGH!

One of my fave things to eat while sick is Vegetable Beef Soup.  This recipe is super simple, so not much effort when you are sick.  It’s very hearty.  It’s crock pot friendly. It’s also a freeze and reheat kind of meal.  Seriously, what more can you ask?

This recipe is highly customizable, so feel free to change it up for your tastebuds!

 

Ingredients:

2lbs ground beef  (or venison, turkey, chicken)
1 can cream of mushroom
1 28 oz can of stewed/diced tomatoes
1 can each :
green beans
corn
carrots
sliced potatoes
peas

Add it all  in the crock pot and let it meld together for 6-8 hours on low.  Add water to the get the consistency you like.  I like mine thick, my mom likes it with more liquid.  I do add salt, pepper and any other spices that I might fancy at the moment.  If you put in a bay leaf, only use one or two and make sure you take it out before you serve.  Serve with cornbread, bread bowls or crackers.

If you want to, you can freeze it.  Just let it cool down to room temp and put in a freezable container.  I usually just use large freezer ziplock bags and store flat in the freezer.  Easy to reheat on the stove or crockpot!

The Nelson Family

I’m not a professional photographer.  I just enjoy taking pictures.  I really like playing with the pictures afterwards the most.  I should probably spend some time learning more about aperture and  shutter speed.  But nope, I choose to play in Photoshop with the pictures, using actions, tweaking this, cropping that, until I have something that I think looks great.

I have friends.  Yup. I do.  One of them is named Tina.  A while back she asked me to take pics of her son’s Junior prom.  Well, actually we were just chatting and I mentioned I love to take photos and if she’d like, I could take pics of his prom.  So, I did.   It was so fun.  Seriously.  Jacob  just cracks me up! Menu Monday 11/14/11

It’s menu plan Monday again.  Strange, seems to happen weekly or something. :)   I’m loving the Plan to Eat system, makes it so easy to plan meals!

I’ll be repeating one from last week, this week.  I was supposed to make Fake -Fried Pork Chops and didn’t, so those are on the menu this week.  A couple of other things about the menu this week is I’m trying to go for healthier options that won’t break the bank.  I’ve got to get back on track with my weight loss!

On the menu this week

  • Honey Mustard Pretzel Coated Chicken Fingers with  Butternut Squash Fries – these recipes are from Hungry Girl.  I used to be a huge follower (it’s where I learned about laughing cow cheese and pumpking cupcakes/muffins!).  I stumbled across her tv show a couple of weeks ago and was hooked right back in!  I’ll let you know how the recipe fairs at this household.
  • Fake Fried Pork Chops  with  Mac & Cheese – ok so the mac and cheese isn’t very low cal, but I’ll have a small portion and add a larger side salad for me.
  • White Chicken Chili – a cold weather standby here at the house.  It’s healthy, full of protein and fiber, and absolutely delicious!
  • Twenty Minute Chicken Parmesan -  This one is quick and easy, for the night when you need to pull something that makes the kids happy together fast!
  • Leftovers – as usual, we have leftover night.  I haven’t planned more meals this week because we might be going out of town this weekend to start our Thanksgiving break early, leaving the hubs at home for a while.  
 
  • Rainbow Cupcakes – I’ll be making about 4 dozen of these on Wednesday for Kacie’s cell group and a few for others.  She’s been wanting me to make them for a while.  Can’t wait to try it!
