Mexican Chicken Bowl

I started losing weight last year.  It stalled around July and I just kinda skimmed through life not really adhering to anything much.  In late October/early November, I signed up with Weight Watchers Online.  I had a few friends that had seen success with their SmartPoints system.  I liked the idea of Weight Watchers because everything is permissible, but using the points, it guides you to make healthy choices overall.  I’m now doing the Freestyle program, which has a lot of zero point foods – like lean proteins (chicken, fish, eggs, etc.).  Your overall points you can have per day decreased to accommodate the new zero point foods, but I’m really loving this system!

This is one of my fave lunches.  It’s really easy to put together, its filling but not too heavy and it has a Mexican flair… ya’ll I love Mexican food!  The actual filling is zero points!!! It’s the cheese and tortillas that even adds points to this delicious meal!

Mexican Chicken Bowl (Weight Watcher Friendly)

So filling and ZERO SmartPoints! I don't cook this together, I just throw it all in a bowl, portion it out and then when its lunchtime, heat it up in the microwave!

  • 2 lbs salsa chicken* shredded
  • 1 bag frozen cauliflower rice (I use Green Giant)
  • 1 can yellow corn drained
  • 1 can black beans rinsed and drained
  • 1 can rotel (can substitute for 1 can diced tomatoes and 1 small can of green chilies)


  1. Add ingredients in a large bowl and mix together. Easy Peasy!

Recipe Notes

*Salsa Chicken

I keep salsa chicken on hand.  I take a frozen 3 lb bag of chicken and add it to the crockpot with a can or two of rotel (or salsa).  I then cook this on low for 6-8 hours and shred it.  It's simple to make and so versatile! I use it in this recipe, as well as Mexican Chicken Chili, Chicken Quesadillas, add to salads, etc.  Salsa Chicken is zero SmartPoints.



**Serving Suggestions**

I serve this with 1 or 2 pieces of Velveeta sliced cheese (1 SmartPoint for 1 slice), 2 corn tortillas (2 SmartPoints) and a dollop of 0% Fage Greek Yogurt (0 SmartPoints).  This makes for a 3 to 5 SmartPoint lunch!
